Pale and bright colour here, light straw, with a green hue. Beautiful nose, very complex, this is definitely a sherry style; so I would talk about those notes coming from the biological ageing here. It is really offering a very nice nose here, great intensity and purity; with notes of chamomile, fresh almond, citrus, a hint of wood. It adds a great sense of freshness and a certain way youth, but should have some ageing behind it. Excellent bite on the palate, classically bone dry here, with an excellent mouth-watering freshness here. Once again those nut flavours of almond and hazelnut are coming back, with some zesty citrus notes. Very mineral almost with what we normally refer to in these wines is a salty sensation on the finish, even if the wine doesn't really contain any salt. Excellent length and gripe on the finish as well. Very nice wine, it just wants me to order some olives and tappas and continue drinking it.
